Skinny Cucumber Margaritas

All of my cocktails are naturally “skinny” by design – I’ve never been a fan of sugary drinks and I’d rather spend the calories on chips and guac.  This recipe makes two margaritas, which you can easily multiply. Make a pitcher for the weekend and share with friends (or yourself – been there, done that).

Ingredients:

3 oz blanco tequila (Casamigos is my favorite!)

2 oz freshly squeezed lime juice

2 oz freshly squeezed cucumber juice 

1 tbsp agave nectar

Splash of sparkling water 

Sliced cucumbers for garnish 

*To make the cucumber juice, you can either run a cucumber through a juicer, or peel/blend/strain a cucumber in a blender. 

Add all of the ingredients to a cocktail shaker with a handful of ice cubes. Shake for 30 seconds and strain into a salt-rimmed margarita glass with fresh ice. Top with a splash of sparkling water and garnish with cucumber slices.
